Curry Type: MILD
Veg Pilao is a fragrant and flavourful rice dish, prepared with mixed vegetables, spices, and aromatics. Using a pre-made Nosh Spice Mix makes the cooking process faster and more convenient, delivering a delicious meal with minimal effort.
Ingredients
For the Pilao:
- 1 cup Basmati rice, soaked and drained
- 2 cups mixed vegetables (carrots, peas, beans, etc.), chopped
- 1 medium onion, thinly sliced
- 2 tablespoons ghee or vegetable oil
- 1 tablespoon Nosh Spice Veg Pilao Mix
- Salt to taste
- 2 cups water
- Chopped cilantro for garnish
- Sliced almonds or cashews for garnish (optional)
Cooking Method
Step 1: Prepare the Base
- Heat the ghee or vegetable oil in a large pot or pan over medium heat.
- Add the sliced onions and sauté until they turn golden brown.
Step 2: Cook the Vegetables
- Stir in the mixed vegetables and sauté for a few minutes until they start to soften.
- Add the Nosh Spice Veg Pilao Mix and stir well to coat the vegetables evenly.
Step 3: Cook the Rice
- Add the soaked and drained Basmati rice to the pot. Gently stir to combine the rice with the vegetables and spices.
- Pour in the water and add salt to taste. Give it a gentle stir.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and let the rice cook for about 15-20 minutes, or until the rice is tender and the water has been absorbed.
Step 4: Let it Rest
- Once the rice is cooked, remove the pot from the heat and let it sit, covered, for an additional 5-10 minutes to allow the rice grains to fluff up.
Step 5: Serve and Garnish
- Gently fluff the rice with a fork to separate the grains.
- Garnish the pilao with chopped cilantro and sliced almonds or cashews if desired.
- Serve hot as a main dish or as a side with yogurt, raita, or your favourite curry.
Enjoy your flavourful and aromatic homemade veg pilao!
