Wholesome & Delicious: The Irresistible Charm of Veg Pilao

Veg Pilao is a fragrant and flavourful rice dish, prepared with mixed vegetables, spices, and aromatics. Using a pre-made Nosh Spice Mix makes the cooking process faster and more convenient, delivering a delicious meal with minimal effort. 

Ingredients 

For the Pilao: 

  • 1 cup Basmati rice, soaked and drained 
  • 2 cups mixed vegetables (carrots, peas, beans, etc.), chopped 
  • 1 medium onion, thinly sliced 
  • 2 tablespoons ghee or vegetable oil 
  • 1 tablespoon Nosh Spice Veg Pilao Mix 
  • Salt to taste 
  • 2 cups water 
  • Chopped cilantro for garnish 
  • Sliced almonds or cashews for garnish (optional) 

Cooking Method 

Step 1: Prepare the Base 

  1. Heat the ghee or vegetable oil in a large pot or pan over medium heat. 
  2. Add the sliced onions and sauté until they turn golden brown. 

Step 2: Cook the Vegetables 

  1. Stir in the mixed vegetables and sauté for a few minutes until they start to soften. 
  2. Add the Nosh Spice Veg Pilao Mix and stir well to coat the vegetables evenly. 

Step 3: Cook the Rice 

  1. Add the soaked and drained Basmati rice to the pot. Gently stir to combine the rice with the vegetables and spices. 
  2. Pour in the water and add salt to taste. Give it a gentle stir. 
  3. Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and let the rice cook for about 15-20 minutes, or until the rice is tender and the water has been absorbed. 

Step 4: Let it Rest 

  1. Once the rice is cooked, remove the pot from the heat and let it sit, covered, for an additional 5-10 minutes to allow the rice grains to fluff up. 

Step 5: Serve and Garnish 

  1. Gently fluff the rice with a fork to separate the grains. 
  2. Garnish the pilao with chopped cilantro and sliced almonds or cashews if desired. 
  3. Serve hot as a main dish or as a side with yogurt, raita, or your favourite curry.
