Curry Type: HOT
Rogan Josh is an aromatic Kashmiri curry dish known for its rich red colour and tender meat. Using a pre-made Nosh Spice Rogan Josh Mix makes the cooking process quicker and more convenient.
Ingredients
For the Marinade:
- 1 pound (450g) boneless lamb or beef, cubed
- 1 tablespoon Nosh Spice Rogan Josh Mix
- ½ cup plain yogurt
- 1 tablespoon mustard or olive oil
- Salt to taste
For the Curry:
- 2 tablespoons mustard oil or ghee
- 1 large onion, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 2 teaspoons Nosh Spice Rogan Josh Mix
- 2 tablespoons tomato puree (blend 2 fresh tomatoes if using fresh)
- ½ cup water
- Salt to taste
- Chopped cilantro for garnish
We highly recommend adding 1 teaspoon Nosh Spice Garam Masala for that extra zing.
Cooking Method
Step 1: Marinade the Meat
- In a bowl, mix the Nosh Spice Rogan Josh Mix, yogurt, mustard or olive oil, and salt.
- Add the cubed meat, ensuring all pieces are coated with the marinade.
- Cover and refrigerate for at least 2 hours (overnight is ideal for maximum flavour infusion).
Step 2: Cook the Meat
- In a large skillet or pot, heat the mustard oil or ghee over medium heat.
- Add the finely chopped onion and cook until golden brown.
- Stir in the ginger paste and garlic paste, cooking for another minute until the raw smell disappears.
Step 3: Sear the Meat
- Add the marinated meat to the skillet and cook until browned on all sides, ensuring the meat is seared to lock in the flavours.
Step 4: Prepare the Curry
- Sprinkle the Nosh Spice Rogan Josh Mix over the browned meat and mix well.
- Pour in the tomato puree and water, stirring to combine all ingredients.
- Lower the heat to a simmer, cover the pot, and cook for 1 to 1.5 hours, or until the meat becomes tender. Add more water if the curry becomes too dry during cooking.
Step 5: Final Touches
- Check the seasoning and add salt as needed.
- Once the meat is tender and the flavours have melded, garnish with chopped cilantro and a sprinkle of Nosh Spice Garam Masala for extra flavour (optional).
Step 6: Serve
- Serve the Rogan Josh with steamed rice or Indian bread like naan or roti.
