A new favourite with our Air Fryer Rogan Josh! This recipe brings the aromatic spices and tender meat of traditional Rogan Josh into the air fryer, making it healthier and just as delicious.
Ingredients
For the Marinade:
- 500g lamb or mutton, cut into chunks
- 1/2 cup plain yogurt
- 1 tbsp ginger-garlic paste
- 1 tsp Nosh Spice Rogan Josh Mix
- Salt to taste
For the Sauce:
- 1 large onion, finely chopped
- 3 tomatoes, pureed
- 3 tbsp oil
- 1 tsp garam masala
- 1/2 tsp Nosh Spice Rogan Josh Mix
- Fresh cilantro for garnish
- Lemon wedges for serving
Cooking Method
Step 1: Marinate the Meat
- In a bowl, combine the lamb chunks with yogurt, ginger-garlic paste, Nosh Spice Rogan Josh Mix, and salt. Mix well to coat the meat evenly.
- Cover and refrigerate for at least 1 hour (preferably overnight).
Step 2: Prepare the Sauce
- Heat 1 tbsp of oil in a pan over medium heat. Add the chopped onions and sauté until golden brown.
- Add the pureed tomatoes to the pan and cook until the mixture thickens, and the oil starts to separate.
- Stir in the remaining spices: garam masala, paprika, and Nosh Spice Rogan Josh Mix. Cook for a few minutes until fragrant.
- Remove the sauce from heat and let it cool slightly.
Step 3: Air Fry the Lamb
- Preheat the Air Fryer to 180°C (350°F).
- Lightly grease the Air Fryer basket with 1 tbsp of oil.
- Place the marinated lamb chunks in the basket in a single layer. Air fry for about 15-20 minutes, shaking the basket halfway through to ensure even cooking.
Step 4: Combine and Cook
- Once the lamb is cooked, transfer it to a deep, oven-safe dish.
- Pour the prepared sauce over the lamb and mix well.
- Place the dish back in the Air Fryer and cook at 180°C (350°F) for another 10 minutes, allowing the flavours to meld together.
Step 5: Serve
- Garnish with fresh cilantro.
- Serve hot with lemon wedges, accompanied by rice or naan.
Tips:
- Adjust the spice levels according to your preference.
- For a richer flavour, you can add a little more oil or ghee to the sauce.
- If you prefer a smoother sauce, you can blend the onion-tomato mixture before adding the spices.
