Golden Buns, Guilt-Free Bhaji—Air Fryer Style!

Ingredients

For the Bhaji:

  • 2 cups mixed vegetables (potatoes, cauliflower, peas, carrots, beans), chopped
  • 1 large onion, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 cup tomato puree
  • 1 tablespoon Nosh Spice Pav Bhaji Mix
  • 2 tablespoons butter or oil
  • Salt to taste
  • Chopped cilantro for garnish

Cooking Method

Step 1: Prepare the Vegetables

  1. Pre-cook the mixed vegetables by boiling them until tender. This can be done in a pot with water or by steaming them.
  2. Once cooked, mash the vegetables slightly to create a chunky texture.

Step 2: Preheat the Air Fryer

  1. Preheat your air fryer to 360°F (180°C).

Step 3: Air Fry the Vegetables

  1. Toss the cooked and mashed vegetables with 1 tablespoon of oil.
  2. Place them in the air fryer basket and air fry for about 10 minutes, shaking the basket halfway through. This step helps to dry out excess moisture and give a slight roast to the vegetables.

Step 4: Prepare the Bhaji

  1. In a large pan, heat the remaining 1 tablespoon of oil or butter over medium heat.
  2. Add the finely chopped onion and sauté until it turns golden brown.
  3. Add the ginger paste and garlic paste, and sauté for another 1-2 minutes until fragrant.
  4. Stir in the tomato puree and cook for 5-7 minutes until the oil begins to separate from the mixture.
  5. Add the Nosh Spice Pav Bhaji Mix and salt to taste. Mix well.
  6. Add the air-fried vegetables to the pan and mix everything together. Cook for another 5 minutes, allowing the flavours to meld.
  7. If the mixture is too thick, you can add a little water to achieve the desired consistency.

Step 5: Serve

  1. Garnish with chopped cilantro.
  1. Serve hot with buttered pav (bread rolls) or any bread of your choice.
