Ingredients

For the Base:

  • 2 tablespoons ghee or vegetable oil
  • 1 thinly sliced onion
  • 2 cups mixed vegetables (e.g., carrots, peas, bell peppers)

For Mixing Spices and Rice:

  • 1 cup Basmati rice (soaked and drained)
  • 1 tablespoon Nosh Spice Veg Pilao Spice Mix
  • Salt to taste

For Cooking:

  • 2 cups water

For Garnish:

  • Chopped cilantro
  • Sliced almonds or cashews (optional)

Cooking Method

Step 1: Prepare the Base

  1. Preheat your air fryer to 350°F (175°C) for about 5 minutes.
  2. In an air fryer-safe pan or bowl, add ghee or vegetable oil.
  3. Add the thinly sliced onion to the pan. Place the pan in the preheated air fryer and cook for about 5-7 minutes until the onions are golden brown and caramelized. Stir halfway through to ensure even cooking.
  4. Add the chopped mixed vegetables to the caramelized onions in the pan. Stir well to combine.
  5. Cook the vegetables in the air fryer for about 5 minutes to slightly tenderize them. Stir halfway through.

Step 2: Mix in Spices and Rice

  1. Add the soaked and drained Basmati rice to the pan with the vegetables.
  2. Sprinkle in the veg pilao spice mix and salt to taste.
  3. Mix everything gently to ensure the rice and vegetables are well-coated with the spices.

Step 3: Add Water

  1. Pour 2 cups of water into the pan. Stir gently to combine.

Step 4: Cook the Pulao

  1. Cover the pan with aluminium foil or a lid that fits the air fryer.
  2. Place the covered pan back into the air fryer and cook at 350°F (175°C) for 20-25 minutes, or until the rice is cooked and all the water is absorbed.
  3. Check the rice for doneness around the 20-minute mark. If needed, cook for an additional 5 minutes.

Step 5: Garnish and Serve

  1. Once the veg pilao is cooked, carefully remove the pan from the air fryer.
  2. Fluff the rice gently with a fork.
  3. Garnish with chopped cilantro and sliced almonds or cashews if using.
  4. Serve hot and enjoy your delicious and aromatic veg pilao made in the air fryer!
