Ingredients
For the Base:
- 2 tablespoons ghee or vegetable oil
- 1 thinly sliced onion
- 2 cups mixed vegetables (e.g., carrots, peas, bell peppers)

- 1 cup Basmati rice (soaked and drained)
- 1 tablespoon Nosh Spice Veg Pilao Spice Mix
- Salt to taste

- 2 cups water

Cooking Method
Step 1: Prepare the Base
- Preheat your air fryer to 350°F (175°C) for about 5 minutes.
- In an air fryer-safe pan or bowl, add ghee or vegetable oil.
- Add the thinly sliced onion to the pan. Place the pan in the preheated air fryer and cook for about 5-7 minutes until the onions are golden brown and caramelized. Stir halfway through to ensure even cooking.
- Add the chopped mixed vegetables to the caramelized onions in the pan. Stir well to combine.
- Cook the vegetables in the air fryer for about 5 minutes to slightly tenderize them. Stir halfway through.
Step 2: Mix in Spices and Rice
- Add the soaked and drained Basmati rice to the pan with the vegetables.
- Sprinkle in the veg pilao spice mix and salt to taste.
- Mix everything gently to ensure the rice and vegetables are well-coated with the spices.
Step 3: Add Water
- Pour 2 cups of water into the pan. Stir gently to combine.
Step 4: Cook the Pulao
- Cover the pan with aluminium foil or a lid that fits the air fryer.
- Place the covered pan back into the air fryer and cook at 350°F (175°C) for 20-25 minutes, or until the rice is cooked and all the water is absorbed.
- Check the rice for doneness around the 20-minute mark. If needed, cook for an additional 5 minutes.
Step 5: Garnish and Serve
- Once the veg pilao is cooked, carefully remove the pan from the air fryer.
- Fluff the rice gently with a fork.
- Garnish with chopped cilantro and sliced almonds or cashews if using.
