Tikka Masala

Chicken Tikka Masala is a popular North Indian dish known for its tender marinated chicken pieces in a rich and creamy tomato-based gravy. Using pre-made Nosh spice mix makes the cooking process quicker and more convenient.

Ingredients

For the marinade:

  • 1 pound (450g) boneless chicken, cut into bite-sized pieces
  • 2 tablespoons Nosh Spice Tikka Masala spice mix
  • 1/2 (Half cup) plain yogurt
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 tablespoon lemon juice
  • Salt to taste
  • Skewers (wooden or metal)

For the Sauce:

  • 1 tablespoon butter or oil
  • 1 medium onion, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 2 tablespoon tomato puree (2 Tomatoes if using fresh)
  • 1/2 (Half)tablespoons ready-to-use Tikka Masala spice mix
  • 1/2 (Half) cup heavy cream
  • Salt to taste
  • Chopped cilantro for garnish

Recipe

  • In a bowl, mix the yogurt, Nosh Spice Tikka Masala spice mix, ginger paste, garlic paste, lemon juice, and salt. Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour (overnight is ideal).
  • Preheat your grill or oven to medium-high heat.
  • If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning during grilling.
  • Thread the marinated chicken pieces onto the skewers.
  • Grill the chicken skewers for about 10-15 minutes, turning them occasionally, until they are cooked through and slightly charred. You can also cook them in the oven at 400°F (200°C) for about 15-20 minutes, turning once halfway through.
  • Once cooked, remove the chicken from the skewers and set aside.
  • For the Masala Sauce:
  • In a pan, heat the butter or oil over medium heat.
  • Add the chopped onion and sauté until it becomes soft and translucent.
  • Stir in the ginger paste and garlic paste. Cook for another minute until fragrant.
  • Pour in the tomato puree and Nosh Spice Tikka Masala spice mix. Cook the mixture for about 5-7 minutes, stirring occasionally, until the oil starts to separate from the sauce.
  • Lower the heat and stir in the heavy cream. Allow the sauce to simmer gently for about 5 minutes.
  • Gently add the grilled chicken pieces to the masala sauce. Let everything simmer together for an additional 5-10 minutes to allow the flavours to meld.
  • Garnish with chopped cilantro before serving.
  • Serve the Chicken Tikka Masala with steamed rice, naan, or Indian bread of your choice.
