Roganjosh

Aromatic Kashmiri curry dish that’s known for its rich red colour and tender meat. Using a pre-made Nosh Spice mix makes the cooking process quicker and more convenient.

Ingredients

For the marinade:

1 pound (450g) boneless lamb or beef, cubed
1 tablespoons Rogan josh spice mix (Nosh Spice)
1/2 (half)cup plain yogurt
1 tablespoon Mustard or Olive oil
Salt to taste

For the curry:
2 tablespoons Mustard oil or ghee
1 large onion, finely chopped
1 teaspoon ginger paste
1 teaspoon garlic paste
2 teaspoons rogan josh spice mix (Nosh Spice)
2 Tablespoon tomato puree (2 tomatoes if using fresh)
1/2( half) cup water
Salt to taste
Chopped cilantro for garnish

We highly recommend adding 1 teaspoon Nosh spice Garam masala for that extra zing.

Recipe

  • In a bowl, mix the Nosh Spice Rogan josh spice mix, yogurt, vegetable oil, and salt. Add the cubed meat to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 2 hours (preferably longer, even overnight) to allow the flavors to infuse.
  • In a large skillet or pot, heat the vegetable oil or ghee over medium heat. Add the chopped onion and sauté until it becomes soft and golden brown.
  • Stir in the ginger paste and garlic paste. Cook for another minute until the raw smell disappears.
  • Add the marinated meat and cook until it’s browned on all sides. This step is about searing the meat to lock in the flavors.
  • Sprinkle the Nosh Spice Rogan josh spice mix over the meat and mix well to coat all the pieces.
  • Pour in the tomato puree and water. Stir to combine all the ingredients.
  • Lower the heat to a simmer, cover the pot, and let the curry cook for about 1 to 1.5 hours, or until the meat becomes tender. You may need to add more water during the cooking process if the curry becomes too dry.
  • Check for seasoning and add salt as needed.
  • Once the meat is tender and the flavors have melded together, garnish the curry with chopped cilantro.
  • Serve the Rogan josh with steamed rice or Indian bread like naan or roti.
