Spiced Pear Chutney Recipe

Ingredients:

4 Ripe pears, peeled, cored, and diced.
1-inch piece of fresh ginger, finely grated.
1 star anise.
1 cinnamon stick.
1/2 cup brown sugar or jaggery.
1/2 teaspoon Chaat masala.
1/2 teaspoon Cumin Powder
1/2 teaspoon Coriander powder
1/2 teaspoon chili powder (adjust to taste)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground fennel
1/4 teaspoon salt (adjust to taste)
1 tablespoon oil
Instructions:

Heat the oil in a medium-sized saucepan over medium heat.

Add the cinnamon sticks and star anise and let them sizzle for about 30 seconds until they release their aroma.

Stir in the finely grated ginger and sauté for another 30 seconds or until it becomes fragrant.

Add the diced pears to the saucepan and cook them for about 2-3 minutes, stirring occasionally, until they start to soften.

Sprinkle the brown sugar or jaggery over the pears and stir well to combine. Allow the sugar to melt and caramelize slightly, which will take about 15-20 minutes.

Add the cumin powder, chaat masala, coriander powder, chili powder, ground cinnamon, ground fennel, and salt to the saucepan. Stir everything together to evenly coat the pears with the spices.

Reduce the heat to low and let the mixture simmer for about 20-25 minutes, stirring occasionally. The pears should become soft and the chutney will thicken and darken in colour.

Taste the chutney and adjust the seasoning if needed, adding more sugar, salt, or chili powder to suit your preferences.

Once the chutney reaches your desired consistency (it should be thick and syrupy), remove it from the heat and discard the star anise and cinnamon stick.

Let the pear chutney cool to room temperature before transferring it to a sterilized glass jar or airtight container.

Store the chutney in the refrigerator for up to 2-3 weeks. The flavours will continue to develop over time, making it even more delicious.
