Pav Bhaji

Pav Bhaji is a popular street food dish from Mumbai, India, made with a medley of vegetables and served with buttered and toasted bread rolls known as “pav.” Using a pre-made Nosh spice mix makes the cooking process quicker and more convenient.

Ingredients

For the Bhaji:

  • 2 cups mixed vegetables (potatoes, cauliflower, peas, carrots, beans), chopped
  • 1 large onion, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 cup tomato puree
  • 1 tablespoons Nosh Spice Pav Bhaji spice mix
  • 2 tablespoons butter or oil
  • Salt to taste
  • Chopped cilantro for garnish

For serving:

  • Pav (bread rolls)
  • Butter
  • Chopped onions
  • Lemon wedges

Recipe

  • Boil or steam the mixed vegetables until they are tender. Drain and set aside.
  • Heat the butter or oil in a pan over medium heat.
  • Add the chopped onions and sauté until they turn golden brown.
  • Stir in the ginger paste and garlic paste. Cook for another minute until fragrant.
  • Add the ready-to-use Pav Bhaji spice mix to the pan and sauté for a minute to release the flavors.
  • Pour in the tomato puree and cook for about 5-7 minutes, stirring occasionally, until the oil starts to separate from the masala.
  • Add the boiled and mashed vegetables to the pan. Mix well to combine the vegetables with the spice mix.
  • Use a potato masher or the back of a spoon to mash the vegetables and spices together. You’re aiming for a slightly chunky, well-mixed texture.
  • If needed, add a little water to achieve the desired consistency. Add salt to taste and mix well.
  • Let the Bhaji simmer for a few minutes, allowing the flavors to meld.
  • Meanwhile, slit the pav bread rolls and lightly butter them. Toast the pav on a griddle or in a pan until they’re golden brown and crisp.
  • Garnish the Bhaji with chopped cilantro.
  • Serve the hot Bhaji with the toasted pav, chopped onions, and lemon wedges on the side.
