Gola Kebab

Gola Kebab is a popular Indian dish made from minced meat and a blend of aromatic spices. It’s often enjoyed as an appetizer or snack.

Ingredients

For the marinade:

  • 1 pound (450g) minced meat (chicken, lamb, beef, or a combination)
  • 1 medium onion, finely chopped
  • 2-3 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 1 green chili, finely chopped (adjust to taste)
  • 1/4 (Quarter)cup fresh cilantro (coriander) leaves, finely chopped
  • 1 Teaspoon Nosh Spice Gola Kebab Mix
  • 1 Teaspoon Nosh Spice Garam Masala (Optional)
  • Salt, to taste
  • 2 tablespoons oil (for basting)
  • 2 tablespoons yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon ground papaya or meat tenderizer (optional, but helps in tenderizing)

Recipe

  • In a bowl, combine the yogurt, lemon juice, and ground papaya (if using). This marinade will help tenderize the meat.
  • Prepare the Meat:
  • In a mixing bowl, add the minced meat along with the chopped onion, minced garlic, minced ginger, chopped green chili, chopped cilantro, Nosh Spice Gola Kebab Mix, garam masala, red chili powder, and salt.
  • Mix and Marinate:
  • Pour the prepared marinade over the meat mixture. Mix everything thoroughly to combine. Cover the bowl with plastic wrap or a lid and let it marinate in the refrigerator for at least 2 hours, or ideally overnight. This allows the flavours to meld and the meat to absorb the spices.
  • Skewer the Kebabs:
  • Preheat your grill or oven to medium-high heat.
  • Take handfuls of the marinated meat mixture and mold them onto skewers, shaping them into long cylindrical kebabs. You can wet your hands with water to prevent the meat from sticking.
  • Cook the Kebabs:
  • Place the skewered kebabs on the grill or in the oven, ensuring they are evenly spaced. Cook for about 15-20 minutes, turning the kebabs occasionally to ensure even cooking and browning. Baste the kebabs with a little oil to keep them moist.
  • Check for Doneness:
  • To check for doneness, cut into a kebab to ensure it’s cooked through. The meat should be no longer pink in the center.
  • Serve the Gola Kebabs:
  • Once the kebabs are cooked, remove them from the grill or oven.
