Madras Curry Perfection in Minutes – Air Fryer Approved!

Enjoy a spicy twist with our Air Fryer Madras Curry! This easy recipe gives you all the bold flavours of Madras curry with less oil and more crunch. Perfect for a quick and tasty meal that’s packed with flavour!

Ingredients

For the Curry:

    • 1 pound (450g) chicken, lamb, or vegetables (e.g., potatoes, cauliflower)
    • 1 tablespoon Nosh Spice Madras Curry Mix
    • 1 medium onion, finely chopped
    • 1 teaspoon ginger paste
    • 1 teaspoon garlic paste
    • 1 cup tomato puree
    • 1/2 cup coconut milk (optional, for creaminess)
    • 2 tablespoons vegetable oil
    • Salt to taste
    • Chopped cilantro or basil for garnish

Cooking Method

Step 1: Prepare the Ingredients

  • If using chicken or lamb, cut into bite-sized pieces.
  • If using vegetables, chop them into bite-sized pieces.

Step 2: Marinate the Protein or Vegetables

  • In a bowl, mix the protein or vegetables with the Nosh Spice Madras Curry Mix and a little salt.
  • Let it marinate for at least 30 minutes.

Step 3: Preheat the Air Fryer

  • Preheat your air fryer to 360°F (180°C).

Step 4: Air Fry the Protein or Vegetables

  • Lightly coat the marinated protein or vegetables with 1 tablespoon of vegetable oil.
  • Place them in the air fryer basket in a single layer.
  • Air fry for 15-20 minutes, shaking the basket halfway through to ensure even cooking.

Step 5: Prepare the Curry Sauce

  • While the protein or vegetables are cooking, heat 1 tablespoon of vegetable oil in a pan over medium heat.
  • Add the finely chopped onion and sauté until translucent.
  • Add the ginger paste and garlic paste, and sauté for another 1-2 minutes until fragrant.
  • Add the tomato puree and cook for 5-7 minutes, stirring occasionally.
  • Mix in the remaining Nosh Spice Madras Curry Mix.
  • If using, stir in the coconut milk for a creamier sauce. Simmer for 5 more minutes.

Step 6: Combine and Cook

  • Once the protein or vegetables are done in the air fryer, add them to the curry sauce.
  • Stir well to coat them evenly with the sauce.
  • Let it simmer for a few more minutes to allow the flavours to meld together.

Step 7: Serve

  • Garnish with chopped cilantro or basil.
  • Serve hot with rice, naan, or your preferred side.
